The production of Mala Mía Espadin Mezcal involves a series of meticulous steps and traditional techniques. The Espadin agave, also known as Agave Angustifolia, are carefully selected when they reach full maturity, around 8-12 years. Post-harvest, the piñas (hearts of the agave) are roasted in a conical-shaped, stone-lined pit for at least three days. This slow roasting process caramelize the natural sugars, imparting the smoky flavor we associate with Mezcal. After roasting, the piñas are crushed and fermented, following which the liquid is distilled at a low temperature. This process may be repeated to achieve the desired alcohol content, typically between about 45% and 55%. The critical art of the process lies in achieving the delicate balance of flavors.
