About Copalli Organic Barrel Rested Rum
Only three ingredients are used to craft Copalli Barrel Rested Rum: Fresh pressed juice from locally grown, organic sugar cane, yeast and rainwater. The Copal Tree Distillery is designed to be zero waste, where a rum free of added flavors, colors, or additives is proudly crafted. The sugar cane juice is distilled in column and pot stills, and the rum is then rested in used American Oak bourbon barrels which mature in the unique rainforest climate, to create a rich, sweet rum that tastes delicious served neat, on the rocks, and in cocktails.
Tasting Notes for Copalli Organic Barrel Rested Rum
On the nose: vanilla, oak, and leather. The palate reveals flavors of spice-cinnamon and nutmeg, blackberries and tobacco.
Suggested Serves
- Copalli Negroni
- 2 oz Copalli Barrel Rested Rum
- 1 oz Campari
- ½ oz Cointreau
- ¾ oz Sweet Vermouth
- Instructions: Build in a mixing glass, stir until chilled and strain into a rocks glass over a big cube of ice and garnish with orange peel.
- Copalli Bird
- 1 oz Copalli Barrel Rested Rum
- 1 oz Copalli Cacao Rum
- 1 oz Campari
- 2 oz Pineapple Juice
- 1 oz Lime Juice
- ¾ oz Simple Syrup
- Instructions: Add ingredients to a shaker with ice. Shake until chilled. Strain and pour over clean ice in a tall glass, garnish with dehydrated pineapple or pineapple wedge.
- Watermelon Smash
- 2 oz Copalli Organic Barrel Rested Rum
- 1 oz Lime Juice
- 1 oz Simple Syrup
- Pinch of Mint
- Watermelon Chunks
- Instructions: Add ingredients to a shaker, muddle watermelon chunks, add ice. Shake until chilled. Strain over clean ice and garnish with mint and lime wheel
