5 oz. chilled sparkling white wine,
.75 oz. Giffard Cassis Noir de Bourgogne
Combine ingredients together in a chilled wine glass and stir briefly. Garnish with a lemon peel.
French Soda
1 oz. Giffard Cassis Noir de Bourgogne
3 oz. white wine
3 oz. club soda
Add all ingredients in a large glass over ice and stir gently. Garnish with lime slice.

2 oz. Agave de Cortes Joven Mezcal
.5 oz. Giffard Cassis Noir de Bourgogne
.25 oz. Campari
.5 oz. simple syrup
.75 oz. lime juice,
2 dashes chocolate bitters
Combine ingredients together in a shaker with ice. Shake and strain into a chilled cocktail glass. Garnish with lime wheel.
Sangre de Agave
1 oz. blanco tequila
1 oz. Blackstrap rum
.75 oz. lime juice
.25 oz. simple syrup
.5 oz. Giffard Cassis Noir de Bourgogne
Combine first four ingredients in a shaker with ice. Shake and strain into a tall glass over fresh ice, filled to top. Drizzle cassis on top. Garnish with a lime wheel.

Giffard’s research resulted in the invention of a clear mint liqueur, steam-distilled from the Mitcham variety of peppermint. As delicious as it was refreshing, the liqueur was immediately received with enthusiasm from the townspeople of Angers. Emile called his elixir Menthe Pastille after the mint candies that were famous at the time.
